Recipe: Grato’s Steak Tartare
Ingredients:
2 cups finely-diced top round of beef
4 teaspoons finely-chopped parsley, plus more for garnish
8 teaspoons finely-diced shallots
2 tablespoons finely-chopped cornichon
2 teaspoons finely-chopped capers
2 tablespoons horseradish
4 teaspoons finely diced balsamic onions (See recipe)
¼ cup grated Parmesan, plus more for garnish
2 teaspoons salt
1 teaspoon black pepper
¼ cup white balsamic vinaigrette (See recipe)
8 teaspoons horseradish aioli, for serving (See recipe)
8 pieces grilled or toasted sliced bread, for serving
1 Using a medium bowl, gently fold together all ingredients except for the horseradish aioli and toast.
2 Spread 1 teaspoon of horseradish aioli on each piece of toast.
3 Top each piece of toast with ¼ cup Steak tartare.
4 Sprinkle with parsley and Parmesan.

Balsamic onions
2 onions, sliced ¼-inch thick
5 tablespoons balsamic vinegar, divided
3 tablespoons olive oil
Salt and black pepper, to taste
Preheat the oven to 375 degrees F. Toss onions with ¼ cup vinegar and oil. Season with salt and pepper, to taste. Place on a sheet pan and bake until tender for about 10 minutes. Remove from the oven and drizzle with the remaining balsamic vinegar.
Makes about 2 cups

White balsamic vinaigrette
2 cups white balsamic vinegar
¾ cup finely diced shallots
2 teaspoons fresh thyme leaves
2 tablespoons honey
1 cup extra virgin olive oil
1 cup blended oil
Salt, to taste
Using a large bowl, whisk together vinegar, shallots, thyme and honey. Gradually drizzle in oils, whisking constantly. Season with salt, to taste.
Makes 1 1/4 quarts

Horseradish aioli
1 cup mayonnaise
½ cup horseradish
1 tablespoon Champagne vinegar
1 ¼ teaspoons salt
1 cup sour cream
Using a food processor, fitted with a blade attachment, combine the ingredients and pulse until smooth.
