Recipe: Mario’s Osteria’s Bruschetta on Pizza Dough (Boca Raton, FL)

Recipe: Mario’s Osteria’s Bruschetta

Adapted from Mario’s Oseteria

1 cup diced tomatoes

2 tablespoons diced red onions

1 tablespoon fresh, chopped basil

2 tablespoons minced garlic

1 tablespoon extra-virgin olive oil, plus more for pan

4 ounces pizza dough

all-purpose flour, for rolling dough

2 tablespoons grated asiago cheese

1 cup crumbled gorgonzola cheese

Salt and black pepper, to taste

1. Using a small bowl, combine tomatoes, onion, basil, garlic and olive oil. Season with salt and pepper, to taste. Set aside.

2. Preheat oven to 500 degrees F. Grease baking sheet with olive oil, set aside. Roll dough to a thin, 10-inch diameter circle. Transfer dough to prepared baking sheet. Top with asiago cheese.

3. Bake until crust is browned and crispy, about 10-15 minutes. Cool slightly.

4. Slice the crust into six triangles. Top triangles with tomato mixture. Sprinkle with gorgonzola cheese and serve.
