Recipe: Mushroom Spread and Greenbean-Avocado Spread from Golden Palate Chanson Restaurant at The Royal Blues Hotel, Deerfield Beach, FL

Mushroom Spread

Extra Virgin Olive Oil (2 tbs)

Any fresh mushrooms (1 cup)

Garlic (1 clove, minced)

Fresh thyme (tsp, chopped)

Shallots (2 finely chopped)

1/2 white onion (chopped)

1/2 cup white wine

4 ounces cream cheese (may opt for light cream cheese or omit depending on dietary purposes and desired consistency)

truffle oil- 2 drops

Italian parsley (2 tsp, chopped)

salt and pepper to taste

 

Method:

In a pan heat olive oil and add onions, shallots, garlic, and thyme and allow to sweat over medium-high heat, stirring occasionally. Add mushrooms, let cook a few minutes till mushrooms have softened, add white wine to deglaze and let simmer on low heat until ingredients have softened.

In a food processor, add contents of the pan, and cream cheese (optional), parsley, salt and pepper to taste. Combine in food processor until desired consistency. This makes a great spread for bread, chips, crackers, or crudités.

 

Greenbean-Avocado Spread

Ingredients:

Extra Virgin Olive Oil (2 tbs.)

Green beans (1 cup, cut into small pieces)

Shallots (2 minced)

Garlic (1 clove, minced)

Thyme (1 tsp, chopped)

Avocado (1 avocado, scoop the inside, pit removed)

Cayenne (pinch)

Cumin (pinch)

Cream Cheese (4 ounces, optional, may opt for light cream cheese)

2 ounces vegetable or chicken stock

juice of 1/2 lemon

 

Method:

Sweat shallots, garlic, thyme, and green beans. Deglaze with vegetable stock, when soft, add to food processor and combine with avocado, cayenne, cumin, and cream cheese. Salt and pepper to taste. Process until desired consistency.
