Kentucky Green Bee Cocktail

Mixologist Note: I like to surprise the members and guests of Addison Reserve Country Club with my new cocktail constructions of their classic favorites. The Kentucky Green Bee Cocktail is both elegant and well balanced.
Serves 1
Ingredients
Green Bee Mix
2 Pineapple Wheels (core removed)
30 Green Grapes
3 oz. / 90 ml Water
2 inch / 5 cm piece of Celery (from the center of the stalk only)
Whiskey
Ice
2 oz. / 60 ml Evan Williams Honey Kentucky Straight Bourbon Whiskey
Garnish
1 Kebab Skewer (cut to fit martini glass)
3 Green Grapes
2 Pineapple Leaves
Mixologist Note: I prefer to carve my own skewers from local trees and plants, this gives my cocktails a more artistic feel.
Preparation
Green Bee Mix
Dice the pineapple wheels and fill half a bartenders mixing glass then top this with the green grapes.
Add water and be careful to fill only half of the remaining space in the mixing glass.
Place the celery on top.
Mix in a blender for 5-10 seconds.
Strain the mixture into a jar or carafe with a very fine strainer then set aside.
Kentucky Green Bee Cocktail
Fill a bartenders mixing glass with ice.
Add 3 oz. / 90 ml of the Green Bee Mix and 2 oz. / 60 ml of Evan Williams Honey Kentucky Straight Bourbon Whiskey.
Shake thoroughly, then pour into a martini glass.
Assembly
Pierce the 3 green grapes on the skewer and place over the martini glass as shown in the picture.
Cut the pineapple leaf from top to bottom to create fine “hair-like” garnish, then place on top and serve as shown.
