Recipe: Mario’s Osteria’s Mussels Arosta “Sardinia Style”

2 tablespoons extra-virgin olive oil

1 clove garlic, thinly sliced2 cups mussels, about 14

2 tablespoons fresh lemon juice

2 tablespoons white wine

1 tablespoon cold butter, dusted in flour

1 lemon wedge, for garnish

1 sprig thyme, for garnish

1 Using a large saute pan over medium-high heat, add the olive oil, garlic and mussels, stirring occasionally.

2 Once the shells begin to open, add the lemon juice and white wine.

3 Reduce the liquid by half. Add the butter and swirl it into sauce.

4 Discard any mussels that do not open. Transfer remaining mussels to a warmed cast iron pan. Garnish with lemon wedge and fresh thyme.
