Ristorante Sapori: Chef Marco Pindo’s Signature Innovative & Classic Italian and Fresh Seafood: a Boca Raton, Florida Favorite Since 1993!

Ristorante Sapori, one of Palm Beach County’s top Italian restaurants, and one of the most popular restaurants in Boca Raton opened in January 1993 to stellar reviews and has continued to earn numerous 4 star reviews. For the past 22 years Chef Marco Pindo has continued to delight the palates of diners with his authentic, innovative “self-styled” Italian cuisine. Sapori has become known for its “innovative Italian cuisine”, as well as authentic regional Italian dishes, fresh seafood, and delicious pastas. I am proud to award Chef Marco and Ristorante Sapori my Golden Palate Certificate of Excellence™ recognizing his hands-on dedication, quality, and authenticity. Chef/owners like Marco go above and beyond to ensure guests are treated like family.

Marco hails from the Abruzzi region of Italy, an area that many Italians consider to produce the best chefs (my Roman friend whose mother is Abruzzese stands by this!) It is both there and in the United States that he has honed his craft. As they do in Italy, Marco uses the freshest and finest ingredients, prepared in some of the simplest ways to bring out the true “Sapori” or flavors of the dish. Chef Marco imports many of his ingredients directly from Italy, and even goes and brings back truffles he gathers. At the forefront of the culinary scene, he was among the first to introduce Branzino and Chilean Seabass to the South Florida dining scene, and features other delicious fish that are not frequently found on menus, including Skate, Triple-tail, and Corvina, among others. Marco likes to serve whole fish, lightly grilled, filleted tableside, drizzled with fine imported Italian olive oil, as they do in Italy–allowing the simple, delicate flavor and texture of the fish to shine!  Marco says “it is the closest thing to dining in Italy without having to take a plane.”

Very unique Florida clams originally from Cedar Key on the Gulf Coast, partially raised near Sebastian on the East Coast and finished near Okeechobee- sustainable local aquaculture, excellent result!

Ristorante Sapori serves lunch and dinner, as well as a popular Sunday Brunch! Favorite items from the dinner menu include: Insalata Tricolore (pictured above), Clams “Living In Sin” with Homemade Sausage, Rapini, Garlic & Diced Tomato (I love his sense of humor), Grilled Calamari Steak on a Bed of Sliced Tomato and Arugula, and the Sapori Antipasto Plate, featuring: Sliced prosciutto, salami Abruzzese, roasted peppers, homemade mozzarella & tomato, sliced parmigiano reggiano & white anchovies.

Chef Marco makes his own pasta, and features many unique preparations, that you would typically find in Trattorie in Italy. Favorites include: Bigoli Alla Grigia, a Roman dish with sautéed diced onion and guanciale finished with pecorino and a lot of black pepper (essentially Amatriciana without the tomato, hence the name “Gricia” which means “Gray” as the sauce is actually grayish in color without the tomato. Another simple favorite, more typical of Neapolitan cuisine is the Rigatoni Alla Ciociara with
homemade tomato sauce flavored with fresh oregano, percorino and topped with diced fresh mozzarella. Rigatoni Sapori is Marco’s award winning recipe and signature pasta featuring diced prosciutto and sweet onions interlaced with mascarpone cheese, fresh basil and tomato sauce.
Sapori Signature Entrees include: Sweet and Sour Salmon encrusted with sesame seeds topped with julienne vegetables and sweet & sour sauce (Agrodolce is typically Sicilian),
and Snapper Siciliana with diced eggplant, tomatoes, capers, and basil are two great seafood choices. Chef Marco features fresh daily seafood specials, showcasing the best available at any given time.

Meat entrees include a large Roasted Veal Chop with shallots, plum tomato & rosemary, Veal Scaloppine with sweetbreads and porcini sauce, and Pollo Al Forno,
baked dark meat chicken in a terra cotta pot with potato, rosemary and garlic (very Tuscan).

Lunch features include soups, salads, panini, pastas, as well as meat and seafood selections.

See you in Boca Raton, and be sure to tell Chef Marco that Fred Bollaci sent you and Buon’ Appetito!
