Overlooking the Gulf of Mexico, Sale e Pepe (Salt and Pepper) offers authentic gourmet Italian cuisine in a beautiful beachfront setting at the Marco Beach Ocean Resort, an all-suite boutique resort overlooking the white sand beach of Marco Island, Florida.

For everyday dining or special occasions, you’ll love the relaxed, yet sophisticated atmosphere as you dine alfresco on The Terrace at sunset or in the intimate Dining Room with its marble floors and hand-painted frescoes.


Chef Giuliano Matarese and his culinary team create, from scratch daily, a menu straight from his Southern Italian homeland, and pair it with wines from an extensive collection of over 700 labels recognized by Wine Spectator magazine.

Born and raised in Napoli, (Naples) in Southern Italy, Chef Giuliano comes from a family of chefs and restauranteurs. At the very young age, Chef Matarese knew he wanted to become a chef, learning much from his grandmother’s techniques and traditional Neapolitan recipes. As Executive Chef at Convivio and Chef de Partie at Charlie Palmer’s Aureole, a Michelin-star restaurant in New York City, Giuliano brings his personal style and creative approach to traditional Italian cooking, utilizing the freshest local ingredients and those imported from Italy.

The cuisine is authentic regional Italian with a focus on the culinary traditions of Southern Italy and Napoli in particular, a cuisine noted for its French influences, with richly flavored meats and pastas, fresh vegetables, and augmented by seasonal white truffles and house made dolci. The menu also features centuries-old heirloom recipes, updated and beautifully presented. The striking design feature is a 12-foot high hand-painted replica of a 400+ year-old masterpiece by Jacopo Zucchi, artist in residence to the Medici court, chief assistant for Vatican decorations and honored with preparing the funeral decorations for Michelangelo. Zucchi’s original fresco, located in the Palazzo Ruspoli in Rome, inspired contemporary artist Rossen Tonkov, commissioned by Sale e Pepe’s owners, because of its large scale and grandeur as well as its powerful symbolic imagery depicting the constant balance of church and state power, an eternal Italian theme.

Sale e Pepe offers a resort casual yet elegant ambience with floor-length linens and European-style service with Villeroy and Boch china and Schott handmade glassware.

Dinner is served Sun – Wed- Thurs 5:00 p.m. – 9:00 p.m., Fri – Sat 5:00 p.m. – 10:00 p.m., and Happy Hour Wed – Sun 4:30pm -6:00pm.

Highlights from a recent menu include: Yellowfin tuna tartare with crushed avocado, olive oil tomato emulsion, and Italian frisbee, Baked baby Italian eggplant with Fior di latte cheese, tomato, and basil, Dry-aged prime Italian Piedmontese beef tenderloin steak tartare with parmesan wafers, quail egg, pickled red onions, and horseradish cream for starters. Salads include Panzanella with tomato, cucumber, onion and toasted bread, and red wine vinaigrette, Local baby red and golden beets with mache greens, goat cheese mousse, blood orange segments, and aromatic chive oil.

Pasta highlights include Spinach Garganelli pasta in chef’s signature white bolognese rage, Ricotta cavatelli with smoked maine lobster, sweet garlic mascarpone thyme sauce, English peas, and roasted porcini mushrooms, Hand-cut Spaghetti alla Chitarra with manila clams, toasted bread crumbs, calabrese chili peppers, Housemade Rigatoni with red pepper and san marzano tomato emulsion, crumbled crispy sausage, roasted artichoke hearts, and shaved ricotta salata.

Entree choices include Fracosta di Manzo Piemontese, a dry-aged and marinated prime Italian piedmontese beef ribeye with grilled asparagus, roasted potatoes, and port wine sauce, Veal Saltimbocca, scaloppine topped with prosciutto and sage, organic poached egg, spinach, and white wine sauce, Dentice in Cartoccio, parchment-wrapped red snapper filet with clams, rock shrimp, cherry tomatoes, capers, garlic, oregano, white wine, and finished with arugula salad, Salmone Arrosto Scozzese, roasted Scottish salmon filet with pesto breadcrumb crust, wild mushroom ragu, light stone-ground mustard sauce, and sweet sour cipollini onions, and Pesce Spada Grigliato, grilled breaded swordfish steak with eggplant caponata, ricotta mint mousse, lemon zest, and pine nuts.
