
Fred’s Sautéed Broccoli
Serves four people (as a side dish).
Ingredients:
4 cups broccoli florets
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1 cup chicken broth or stock
salt and pepper, to taste
1 tablespoon butter (optional–omit for weight loss purposes)
Instructions:
- Par-boil the broccoli in a pot of boiling water for several minutes.
- Meanwhile, heat a large skillet with the oil and brown the garlic until lightly golden.
- Add the chicken broth or stock, add the broccoli, and salt and pepper, to taste.
- Cook for several minutes until broccoli is soft.
- Stir in the optional butter, it adds creaminess but is not needed. Nutritional analysis below includes the butter.
