Serves 8 as an appetizer
2 pounds medium shrimp, cooked, peeled, deveined, then diced
1/2 medium red or yellow onion, minced
1/2 cup cilantro leaves
chopped 4 ripe Haas Avocados, diced
1 cup ketchup
1/2 cup fresh lime juice
Zest of 1 lime
Sea salt and pepper to taste
Optional dash Tabasco
Mix all ingredients in a large bowl, place in refrigerator 30 minutes to chill and serve.
The ceviche goes well atop mixed greens for a salad like presentation, look for “Spring Mix” for convenience.
