Recipe: Element 47’s “47 Margarita” Slushy with Liquid Nitrogen, at The Five-Star, Five-Diamond Little Nell, Aspen, Colorado!

If you haven’t yet tried the newest tableside cocktails at element 47, you’ll want to put this on your list for summer. The Margarita 47 and Manhattan 100 were each named with their price per cocktail, at $47 and $100 respectively. This Margarita is like a slushy for grown-ups!

Created by element 47’s chief mixologists, these signature drinks are prepared with flair, using only the finest spirits and served tableside via a cocktail cart. In celebration of Cinco de Mayo, we’ve shared the Margarita 47 recipe below:

Ingredients:

3 oz Casa Dragones Silver Tequila

1.5 oz Grand Marnier

1 oz Fresh Squeezed Lime Juice

1 oz Simple Syrup

1 oz Filtered water

1 sheet of edible Silver Leaf

*Liquid Nitrogen – Our mixologists in house prepare the Margarita 47 with liquid nitrogen for effect and to cool the concoction. Liquid nitrogen should only be used by those comfortable operating it. Otherwise, the recipe can be followed by simply mixing all ingredients with ice in a blender.

Directions:

Measure out and add all ingredients into a double-walled bowl and give a quick stir.

Slowly add liquid nitrogen into the bowl to freeze.

While adding the liquid nitrogen, constantly stir the mix with a small whisk.

Keep stirring and adding the liquid nitrogen until it reaches a soft mashed potato consistency.

Top with silver leaf and serve with a silver straw spoon – a tip we took from making mint juleps.

“Hot Toddy” Cocktail Recipe by Golden Palate Element 47 at The Little Nell, Aspen, Colorado!

Element 47’s Hot Toddy

A hot toddy is the perfect drink to warm up and unwind after a day on the slopes. At The Little Nell, we prepare our hot toddy with Colorado Bourbon from Peach Street In Palisade, honey from hives on Aspen Mountain – produced exclusively for element 47 by ski patroller Ed Colby who is a beekeeper in summer, lemon and Chamomile Tea.

You can order our version of the hot toddy at Element 47 and The Little Nell’s apres-ski bar, Chair 9, or make one yourself!

Ingredients:
1 1/2 ounces Peach Street Distillers Bourbon from Palisade, Colo
2 Tbsp Aspen Mountain Honey
3/4 ounce fresh lemon juice

Build in a glass then steam with an espresso wand, top with Mighty Leaf Chamomile Tea and serve.

Recipe: Espresso Martini by Campo de Fiori in Aspen, Colorado!

Not quite sure whether to wake up or wind down? Then try this favorite sweet, espresso-based cocktail from one of the hottest, hippest, most happening bars/restaurants in all of Aspen, Campo de Fiori!

The Campo de Fiori Espresso Martini

3 parts Stoli Vanilla Vodka
1 part Kahlua
1 part Godiva Chocolate liqueur
1 part Baileys The Original Irish Cream
1 shot of Lavazza brewed espresso (or brand of your choice, such as Illy, Kimbo, etc).

Mix all ingredients with ice in a shaker. Shake vigorously, then pour into a chilled martini glass. Garnish with espresso beans.

Recipe: “Light” Truffled ‘Mac and Cheese’ from Rustique Bistro in Aspen, Colorado!

Mac and Cheese is all the rage these days. Unfortunately, this is typically a “diet buster” with many renditions coming in at over 1,000 calories per serving, and this is a “side dish” serving, as in a scoop! Most are loaded with butter, cream, bacon, and other fattening ingredients, designed to taste great, but without any regard to one’s waistline. It’s like the diet went out the door–the hike up Aspen Mountain won’t even make a difference. Here is a lighter version of Mac and Cheese worth trying. You can add in things like lobster if you like, but at least the base is reasonable and tasty!

Notes:
White truffle oil has an intense earthy flavor that wakes up ordinary mac and cheese. We also get extra flavor by steeping the milk with onion and bay leaf.

Ingredients:

2 1/4 cups 1% low-fat milk, divided
2 cups sliced onion (about 1 medium)
1 bay leaf
12 ounces uncooked elbow macaroni
2 tablespoons all-purpose flour
3/4 teaspoon kosher salt
3/4 cup (3 ounces) shredded fontina cheese
1/2 cup (2 ounces) shredded Comte or Gruyere cheese
1 1/2 teaspoons white truffle oil
2 ounces French bread baguette, torn
2 tablespoons grated fresh Parmesan cheese
2 garlic cloves, crushed
1 tablespoon olive oil

Directions:

1. Heat 1 3/4 cups milk, onion, and bay leaf in a large saucepan to 180° or until tiny bubbles form around edges (do not boil). Cover and remove from heat; let stand 15 minutes.

2. Cook pasta according to package directions; drain.

3. Strain milk mixture through a colander over a bowl; discard solids. Return milk to saucepan over medium heat. Combine remaining 1/2 cup milk and flour in a small bowl, stirring with a whisk until well blended. Gradually stir flour mixture and salt into warm milk, stirring constantly with a whisk. Bring mixture to a boil, stirring frequently; cook 1 minute, stirring constantly. Remove from heat; let stand 6 minutes or until mixture cools to 155°. Gradually add fontina and Comté cheeses, stirring until cheeses melt. Stir in pasta and truffle oil. Spoon mixture into a 2-quart broiler-safe glass or ceramic baking dish.

4. Preheat broiler.

5. Place bread, Parmesan cheese, and garlic in a food processor; process until coarse crumbs form. Drizzle with olive oil; pulse until fine crumbs form. Sprinkle breadcrumb mixture over pasta. Place dish on middle rack in oven; broil 2 minutes or until golden brown.

Recipe: Sunday Brunch ‘Margarita’ (Adults Only) Fruit Salad

 

If you’re looking for a beautiful way to present a fruit salad for your next “Bruncheon” or get together, here are some simple, beautiful tips to make your next fruit salad the star of the show!

Start with a pineapple or watermelon, and hollow them out, using the fruit to dice into the fruit salad.

Add the diced fruit into a bowl, and combine with any of your favorites, including: strawberries, raspberries, blueberries, cantaloupe, honeydew, kiwi, apple, peach, nectarine, plum, orange/grapefruit segments, etc.

Instead of sweetening with sugar, I suggest tossing with a little agave nectar and lime juice/zest, it makes it really tart and luscious. I like to add a little Tequila and Grand Marnier (adults only), to make a “Margarita Fruit Salad.” Toss the fruit with the agave and alcohol, and spoon into the hollowed out fruit for an awesome presentation that is delicious and will go great with your Champagne brunch!
