Two Favorites from Golden Palate® Mario’s Osteria in Boca Raton, FL: Grilled Calamari and Famous Gorgonzola Salad!

Mario’s Osteria’s Grilled Calamari

Ingredients:

Juice of 1 lemon, plus more for garnish

½ teaspoon Magic blackened redfish seasoning

1 tablespoon chopped parsley, plus more for garnish

¼ cup extra virgin olive oil, plus more for grill
1 tablespoon minced garlic

2 10-ounce calamari steaks

Kosher salt and black pepper, to taste

Directions:

1. Using a non-reactive medium bowl, whisk together lemon juice, redfish seasoning, parsley, olive oil and garlic, season with salt and pepper, to taste. Place three-fourths of the marinade in a shallow bowl or re-sealable bag. Reserve remaining marinade. Place calamari steaks in marinade, tossing to coat. Marinate calamari overnight in the refrigerator, turning occasionally.

2. Prepare an oiled grill to medium high heat. Grill calamari until cooked through but still tender, about 2 minutes per side. Slice ¼-inch thick on a bias cut.

3. Toss with remaining reserved marinade. Place on serving plates and garnish with lemon wedges and parsley, if desired.

Recipe: Mario’s Osteria’s Famous Gorgonzola Salad

Ingredients:

3 cups chopped romaine lettuce

¼ cup extra virgin olive oil

4 ounces Gorgonzola cheese, crumbled

4 Roma tomatoes, quartered

2 leaves Belgian endive

6 Kalamata olives

Salt and black pepper, to taste

Directions:

1. Using a medium bowl, toss romaine lettuce with olive oil. Season with salt and pepper, to taste. Add half the Gorgonzola and toss to combine.

2. Transfer salad to serving bowls, piling high. Place tomatoes around the outside of the salad pointing up. Place endive leaves on opposite sides of the bowl.

4. Garnish with olives and remaining Gorgonzola cheese.

Makes 2 servings

Note: of course, you can add and enhance this great salad further. Try adding strips of grilled calamari (above recipe), grilled chicken, leftover steak, grilled fish, etc. I also like to add in roasted peppers, avocado, beets, artichokes, etc. to make a very satisfying meal! This salad is a great staple and base upon which to add to your liking!
