Mario’s Osteria’s Recipe for Chicken Meatballs
Serve these with tomato sauce of your choice! Note: you can substitute with turkey, veal, beef, pork, lamb, etc.
Ingredients:
4 pounds fresh chicken breast, finely ground
4 large eggs
2 cups Italian bread crumbs
3 tablespoons cold water
Pinch of celery salt
Pinch of granulated garlic
2 tablespoons fresh minced garlic, sauteed in olive oil until fragrant
¼ cup onion, finely chopped and sauteed in olive oil until soft
Pinch of crushed red pepper flakes
¼ cup fresh parsley, chopped
¼ cup freshly grated parmesan cheese
2 1/2 cups homemade or store-bought marinara sauce, divided
Kosher salt and freshly ground black pepper, to taste
Instructions:
1 Preheat oven to 350 degrees F. Using a large bowl, combine all ingredients using ½ cup marinara sauce, season with salt and pepper, to taste. Reserve remaining sauce for simmering meatballs.
2 Roll mixture into 4-ounce balls. Place on a baking sheet. Bake until cooked through, 20-25 minutes. Transfer meatballs and remaining marinara to a large saucepan over low heat. Simmer 10 minutes or until ready to serve.
Makes about 2 dozen meatballs.
