CRUST INGREDIENTS:
2 c Flour
2 Sticks of Butter
¼ c Sugar
¼ c Ice water
½ teaspoon Salt
CHEESE FILLING INGREDIENTS:
1 8oz pkg Cream cheese
1 c Powdered Sugar
1 Egg
½ teaspoon Lemon zest
½ teaspoon Vanilla
BLUEBERRY FILLING INGREDIENTS:
2 pints Blueberries
¼ c Sugar
2 tablespoons Flour
1 teaspoon Lemon juice
CRUST METHOD:
Add flour, salt, sugar, and cold butter cut into cubes into a food processor and pulse 15 times add water all at once blend until a ball forms wrap in plastic and chill 1 hour.
CHEESE FILLING METHOD:
In a stand mixer beat cream cheese add sugar and beat until smooth, fold in egg, lemon zest, and salt. Set aside
BLUEBERRY FILLING METHOD:
In a large bowl toss blueberries, sugar, flour, and lemon juice.
FINAL STEPS:
Preheat Oven to 350 degrees
Divide dough into 4 equal parts roll each into a 5” circle place on a sheet pan
Top with ¼ of the cheese mixture in the center of the pastry then top with ¼ of the blueberry mixture, making sure the filling remains in the center of the dough.
Now fold the edges of the pastry over to the center leaving a space open.
Bake at 350 degrees for about 30 minutes until golden brown and bubbly.
Sprinkle with powdered sugar and additional blueberries, to garnish.
