Recipe: Eggplant Pancakes from Golden Palate® Mario’s Osteria in Boca Raton, FL

Mario’s Famous Eggplant Pancakes

These have been a favorite and signature item since Mario’s opened as Mario’s of Boca back in 1985!

Note: Allow plenty of time to prepare and assemble. You will need at least 2 firm eggplants with similar diameters to yield 16 slices for 4 servings (4 slices per serving). Prepare tomato sauce in advance or use a quality store bought sauce if you prefer (I like Rao’s in a pinch, but find it easy to make my own with olive oil, onion, San Marzano tomatoes, fresh basil, salt and pepper).

Fried Eggplant Slices:

1 1/2 cups crushed panko (Japanese) bread crumbs*

1 teaspoon salt

1/8 teaspoon fresh-ground black pepper

1 teaspoon dry Italian seasoning

1 tablespoon chopped fresh Italian parsley

2 large eggs, lightly beaten

2 tablespoons water

16 eggplant slices, skin on, about 1/2 inch thick, similar in diameter

1/2 cup all-purpose flour

3/4 cup canola oil, about

1/4 cup olive oil, about

Final Assembly and Serving:

1/3 cup grated asiago cheese

4 (1-ounce) slices mozzarella cheese

12 tablespoons crumbled feta cheese

1 cup hot Tomato Sauce

4 long frilled toothpicks or wooden skewers
To make eggplant: In a large flat dish, combine bread crumbs, salt, black pepper, Italian seasoning and parsley. In a shallow bowl, beat eggs with water to make egg wash. Dust each eggplant slice with flour, dip in egg wash to cover completely, then dredge in seasoned bread crumbs.
In a large heavy skillet, heat combined oils over medium-high heat. Fry eggplant slices without crowding about 1 1/2 minutes a side or until nicely browned and just cooked through. May have to be done in batches. Remove to paper towels to drain. Repeat until all slices are cooked, adding more oil if necessary. Can be made about an hour or so ahead of assembly.

Assembly and serving: Preheat oven to 400 degrees. Cover a large baking sheet with parchment paper and place 16 eggplant slices on it in a single layer. Sprinkle each with a heaping tablespoon of grated asiago cheese. Place a slice of mozzarella cheese on 4 of eggplant slices and sprinkle a tablespoon of crumbled feta cheese on 4 others. Place baking sheet on middle rack of oven 6 to 8 minutes, or until cheeses melt.

To serve, ladle about 1/4 cup hot Tomato Sauce on each of four warm serving plates. Place one eggplant slice topped with only asiago cheese on each plate. Top each of these with a mozzarella-covered eggplant slice, then another with only asiago cheese on top. Crown all with feta-topped slices and secure with frilled toothpicks or wooden skewers. Sprinkle each plate with remaining crumbled feta cheese and serve. Makes 4 servings.

Per serving (without Tomato Sauce): 537 calories, 49 percent calories from fat, 29 grams total fat, 11 grams saturated fat, 161 milligrams cholesterol, 45 grams carbohydrates, 6 grams total fiber, 6 grams total sugars, 39 grams net carbs, 23 grams protein, 1,112 milligrams sodium.

*Available in some supermarkets, Asian markets and gourmet shops.

Two Favorites from Golden Palate® Mario’s Osteria in Boca Raton, FL: Grilled Calamari and Famous Gorgonzola Salad!

Mario’s Osteria’s Grilled Calamari

Ingredients:

Juice of 1 lemon, plus more for garnish

½ teaspoon Magic blackened redfish seasoning

1 tablespoon chopped parsley, plus more for garnish

¼ cup extra virgin olive oil, plus more for grill
1 tablespoon minced garlic

2 10-ounce calamari steaks

Kosher salt and black pepper, to taste

Directions:

1. Using a non-reactive medium bowl, whisk together lemon juice, redfish seasoning, parsley, olive oil and garlic, season with salt and pepper, to taste. Place three-fourths of the marinade in a shallow bowl or re-sealable bag. Reserve remaining marinade. Place calamari steaks in marinade, tossing to coat. Marinate calamari overnight in the refrigerator, turning occasionally.

2. Prepare an oiled grill to medium high heat. Grill calamari until cooked through but still tender, about 2 minutes per side. Slice ¼-inch thick on a bias cut.

3. Toss with remaining reserved marinade. Place on serving plates and garnish with lemon wedges and parsley, if desired.

Makes 2 servings

Recipe: Mario’s Osteria’s Famous Gorgonzola Salad

Ingredients:

3 cups chopped romaine lettuce

¼ cup extra virgin olive oil

4 ounces Gorgonzola cheese, crumbled

4 Roma tomatoes, quartered

2 leaves Belgian endive

6 Kalamata olives

Salt and black pepper, to taste

Directions:

1. Using a medium bowl, toss romaine lettuce with olive oil. Season with salt and pepper, to taste. Add half the Gorgonzola and toss to combine.

2. Transfer salad to serving bowls, piling high. Place tomatoes around the outside of the salad pointing up. Place endive leaves on opposite sides of the bowl.

4. Garnish with olives and remaining Gorgonzola cheese.

Makes 2 servings

Note: of course, you can add and enhance this great salad further. Try adding strips of grilled calamari (above recipe), grilled chicken, leftover steak, grilled fish, etc. I also like to add in roasted peppers, avocado, beets, artichokes, etc. to make a very satisfying meal! This salad is a great staple and base upon which to add to your liking!

Maine Lobster and Scallops with Sweet Corn and Fingerling Potato Ragout

3 ears sweet corn-husk and silk removed-cut from cob (Note: may substitute frozen if fresh not available. I always freeze a number of ears of fresh late spring and summer corn so I have them to use during the off season).
1.5 oz whole butter
1/2 cup diced sweet onion ¼”x1/4”
1/2 cup diced carrot ¼”x1/4”
1/2 cup red bell peppers- diced fine ¼”x1/4”
8oz fingerling potatoes-sliced in 1/2” round slices
2 slices apple smoked bacon, cut into ¼” pieces
1 small bay leaf
1.5 sprigs fresh thyme
2 tbs freshly chopped Italian parsley
1 oz white wine
16 oz heavy cream
3/4 tspn kosher salt
1/4 tspn white pepper
20oz Scallops
2 Maine Lobsters

Sweet Corn and Potato Ragout

Heat butter in a large braiser.
Saute the bacon for 5 minutes until lightly browned
Add onions, peppers and carrots and sauté until onions are translucent
Add wine
Add corn, sauté for 5 minutes
Add the heavy cream
Add the potatoes and bring to a boil.
Add the thyme sprigs
Simmer until reduced by ½
Reduce heat and simmer until the ragout slightly thickens
Add the parsley and season with salt and pepper
Chill and refrigerate

Maine Lobster and Scallops

Boil lobster, remove from shell and cut the tails in half
Scallops: season with salt and white pepper, dredge in flour and sautee in clarified butter or vegetable oil. Cook on medium heat for about 3 minutes on each side until golden brown. Remove from pan and set aside with Maine lobster.

Deglaze sautee pan with 3oz of white wine, add ragout to pan and bring to a low boil. Add scallops and Maine lobster back to pan of ragout for approximately 2 minutes or until they are warm.

Makes 4 servings

 

Macadamia Crusted Yellowtail Snapper with Tropical Fruit Salsa
This is a refreshing and delicious summertime favorite, and long-standing customer favorite.

Ingredients
1/2 cup crushed macadamia nuts
1/4 cup flour
Salt and white pepper to taste
4 (8-ounce) yellowtail snapper filets, skin and bones removed
1/2 cup milk
1/2 cup vegetable oil or clarified butter
1/4 cup white wine
1/4 cup freshly squeezed orange juice
1 teaspoon chopped fresh chives
2 cups mixed diced (choose from mango, papaya, kiwi, carambola, pineapple, blackberry, orange, watermelon, cantaloupe, honeydew, blueberries, strawberries, raspberries, or any sweet fresh, ripe tropical fruit, or fresh berries of your choice)
juice of one lime
2 tablespoons chopped fresh cilantro
1 teaspoon sugar
1/4 cup freshly squeezed orange juice
1/2 chilli pepper, finely diced, seeds and membrane removed (Serrano or Scotch Bonnet)
1/2 small red bell pepper, finely diced
1 scallion, sliced into thin rounds
1 1/2 cups Tropical Fruit Salsa (below)

Procedure:
Mix nuts with flour, salt and pepper. Dip fillets in milk then dredge in nut mixture.

Heat oil in saute pan over medium heat. Place fish, flesh side down, in pan and saute until lightly browned. Turn fish and saute for 2 more minutes.

Remove oil from pan, reserving 2 tablespoons; add wine and orange juice. Reduce by one half and add chives.

Remove fillets to plate. Spoon 1 tablespoon sauce over fish and top with 2 tablespoons of Tropical Fruit Salsa (recipe follows).

Tropical Fruit Salsa
Place fruit in glass mixing bowl and add lime juice, orange juice, cilantro, sugar, peppers and scallion; mix well. Season with salt and pepper. Let sit 1/2 hour before serving.

To complete this meal place the Snapper on top of a bed of coconut basmati rice as they do at the restaurant (optional)–you may also want to try couscous, faro, or orzo– and ENJOY!

You can make your Tropical Fruit Salsa ahead of time and allow to marinate for up to 24 hours, and even use your own favorite fruit salad as a substitute–you may want to serve it on the side of the fish to keep the fish from getting soggy.

I recently visited Resorts World Bimini to see first-hand why more and more South Florida residents and visitors are visiting Bimini, the closest of the Bahamas islands to Florida, just 48 nautical miles east of Miami. Sabor serves casual island fare near the large lagoon-style pool adjacent to the marina. There is also a swim-up bar in the “lazy river” pool, a beach club with food and cocktails, and a bar overlooking the beach where guests can enjoy a variety of water sports.

 

Bimini boasts miles of beautiful beaches and water for exploring on foot, by boat, or by swing! Popular activities for visitors include charter fishing, the Bimini Shark Lab, snorkeling, Bimini Undersea, the South Bimini Nature Trail, and exploring the villages of Alice Town and Bailey Town on North Bimini and enjoying local seafood.

No visit to Bimini would be complete without a stop at Stuart’s Conch Salad Stand. I asked several locals where to go, and it was unanimous. It doesn’t get any fresher. Enjoy with an ice cold Kalik overlooking the water!
