Spanish Rice—with Brown Rice

Serves six people.
This is a very satisfying favorite recipe my mother taught me. To make it healthier, I use brown rice. It tastes delicious. This dish demonstrates how a little bacon can flavor an entire sauce or dish. Cooking the bacon separately and blotting off the fat eliminates calories.

This dish is also excellent with shrimp in addition to or in place of the bacon. Use three to four large shrimp per person. Clean and devein them and toss them raw into the sauce when it is almost done. The shrimp will cook in only a few minutes.

If you like a little heat, you can add a pinch of red chili flakes.

1 cup uncooked brown rice
2 strips bacon
2 tablespoons canola oil
1 large yellow onion, chopped
1 red bell pepper, seeds and stem removed, chopped
1 green bell pepper, seeds and stem removed, chopped
1 orange bell pepper, seeds and stem removed, chopped
1 yellow bell pepper, seeds and stem removed, chopped
1 cup white mushrooms, brushed clean, sliced
sea salt and freshly ground black pepper, to taste
2 cups San Marzano tomato sauce

1. Cook the rice according to the instructions on the package. Set aside.

2. While the rice cooks, sauté the bacon in a small skillet until crispy. Set it aside to drain on paper towels.

3. Heat the canola oil in a large sauté pan or Dutch oven over medium heat.

4. Sweat the onion, peppers, and mushrooms until soft, add salt and pepper, to taste.

5. Add the tomato sauce.

6. Crumble the bacon into small pieces, and add to the sauce.

7. Add the cooked rice.

8. Simmer over medium-low heat for several minutes so flavors amalgamate.

Note: there are approximately 43 calories in a slice of bacon. Making this without the bacon results in 86 less calories total, or 14 calories less per serving.

Cream of Asparagus Soup

cream of asparagus1 pound asparagus spears, cut off the tough portion at the bases and peel the rough part of the stems below the tips until smooth with a vegetable peeler
1 quart chicken stock
1 cup dry white wine (use something you would drink, such as a Sonoma Chardonnay)
1 cup heavy cream (or half and half for weight loss purposes)
1 tablespoon extra virgin olive oil
1 shallot, minced
salt and pepper to taste
pinch freshly grated/ground nutmeg
1 tablespoon fresh tarragon leaves, minced

Heat a large stock pot over medium heat, add the olive oil, simmer the shallot several minutes until translucent, add the chicken stock and white wine add the cleaned asparagus and allow to simmer until tender (about 10-15 minutes).

Remove from heat and allow to cool down slightly. Add to a blender or food processor, puree the stock/shallot/asparagus mix. Add the heavy cream, nutmeg, salt, pepper, and tarragon leaves, continue to pulse another minute.

Serve either heated, chilled, or room temperature. A garnish of fresh mint is nice.

Tabbouleh

This is a favorite from the Middle East. It includes finely chopped parsley, onion, tomato, and cracked bulgur wheat, with lots of lemon and a drizzle of extra-virgin olive oil.

Tabbouleh is great with roasted or lemon chicken, with pita bread, or in a wrap with grilled chicken or turkey. As a substitute for the bulgur, you may also want to try quinoa, couscous, or farro.

Serves four

1 cup bulgur (cracked wheat)
1 cup boiling hot water (to soften the bulgur)
4 cups packed fresh Italian parsley, finely chopped
1 large red or yellow onion, finely chopped
3 large ripe tomatoes, finely chopped
½ cup finely chopped fresh mint
Juice from 4 lemons and 1 lime
¼ cup extra-virgin olive oil
salt and freshly ground black pepper, to taste

1. Prepare the bulgur in a bowl: In a bowl, mix it with the hot water and a drop of oil. Cover and let stand for 15 minutes. Drain through a sieve. Squeeze the moisture out by hand.

2. Combine the finely chopped vegetables with the bulgur.

3. Place the fresh lemon/lime juice in a bowl, add the olive oil and salt and pepper to taste, and mix.

4. Pour over the salad and toss. Serve with additional freshly ground pepper.

Easy Shrimp Ceviche

Serves 8 as an appetizer

2 pounds medium shrimp, cooked, peeled, deveined, then diced
1/2 medium red or yellow onion, minced
1/2 cup cilantro leaves
chopped 4 ripe Haas Avocados, diced
1 cup ketchup
1/2 cup fresh lime juice
Zest of 1 lime
Sea salt and pepper to taste
Optional dash Tabasco

Mix all ingredients in a large bowl, place in refrigerator 30 minutes to chill and serve.

The ceviche goes well atop mixed greens for a salad like presentation, look for “Spring Mix” for convenience.

Escarole and Beans

Escarole and Beans in Red Sauce

1 lb dried cannellini beans (or canned- see note)
5 garlic cloves
2 tbs extra virgin olive oil
2 heads escarole, rough chop
4 cups tomato sauce
4 cups diced/chopped tomatoes (fresh or canned)
2 cups chicken broth/stock
salt and pepper to taste
red pepper flakes (optional)
Pecorino Romano cheese, freshly grated (optional)

soak beans overnight, drain and cover with 6 cups hot water,
cook 1.5 hours or until tender, drain.
Note: if using canned beans, no need to pre-soak.
heat oil and chopped garlic
add chopped escarole, cook until wilted.

Add beans, tomato sauce, diced tomato, broth, stir to combine.  simmer for about 45 minutes, or until slightly thickened.  add salt and pepper to taste, optional red pepper flakes.

Serve in bowls, optional freshly grated cheese on top.

Note: you may also add 2 ounces of pasta per serving to make a more substantial meal. Cook the pasta in salted water until al dente.
