Platinum Palate™ Showcase: Toscana Saporita Cooking School: The Advanced Class Day 3: Stinco di Maiale (Pork Shanks), Ribollita (Tuscan Vegetable & Bread Soup), Sugo di Cinghiale (Wild Boar Sauce), and More!

There is simply so much to learn and 5 full days at Toscana Saporita for the Advanced Class are spent cooking, cooking, cooking, and did I mention eating and drinking?!

One of the breakfast features today were waffles with Nutella and bananas! Oh my! After a couple cups of coffee and some fresh fruit and mineral water to counter the sugar high, it was time to cook! Today we would be doing more authentic Tuscan dishes, including Ribollita Soup, Roasted Pork Shanks, and Sugo di Cinghiale (Wild Boar Sauce), among other things!

After making pasta, we learned about classic “Stinco” or shin, the pork version of Ossobuco (Stinco di Maiale, Pork Shin), and though not typically called this, Ossobuco is technically Stinco di Vitello (Veal Shin).

We learned about Ribollita, the classic Tuscan “kitchen sink” soup, which is perfect especially in the cooler winter months, where a kettle simmers away with all kinds of vegetables and broth, as well as leftover bread to thicken the soup. It is hearty and delicious, and truly any veggies you have in the fridge can work (carrots, celery, tomato, Swiss Chard, Kale, cauliflower, squash, zucchini, etc, etc, etc!)

As the Advanced Class (not for the squeamish), we also got to butcher two pigs that would be used for making Porchetta!

Another Tuscan staple, Cinghiale (Wild Boar meat)–we learned how to marinate the meat overnight and then sauté it to create the delicious Wild Boar Sauce to accompany freshly made pasta!

Creme Brûlée (Crema Brucciata), and Sandra, as you will learn, as a proud Tuscan is quick to point out that most of the foods identified as “French” are actually Tuscan in origin, things like Onion Soup, and Creme Brûlée, for instance. She credits Catherine De Medici of giving away all the secrets when she married a “Frenchy” as she jokingly calls Italy’s neighbor to the northwest! Nonetheless, it is always fun to listen to Sandra and to witness her Tuscan pride!

Platinum Palate™ Showcase: Toscana Saporita Cooking School: The Advanced Class Day 3: Tortelli di Zucca (Butternut Squash-Filled Pasta) Lesson!

This morning we learned to make a classic, elegant Tuscan pasta, Tortelli (think Tortellini are smaller version of stuffed pasta), filled with ricotta and pureed butternut squash. We made them with two different colored pastas we made from scratch. You will learn to make multi-colored pastas at Toscana Saporita in the regular class, using spinach (green), cocoa powder (brown), beet juice (pinkish), and more! These we tossed with a light sauce of a little butter and sage, and they were absolutely delicious! A perfect combination for autumn in Tuscany!

Platinum Palate™ Showcase: Toscana Saporita Cooking School: The Advanced Class Day 3: Breakfast and Tortellini Lesson!

Day 3 (Tuesday) was also beautiful, so I took a brisk walk-run, totaling 90 minutes, as I knew there was going to be a lot of good food to taste!

Back at La Casa Rossa, the aromas of breakfast were in the air! We enjoyed socializing, and then one by one, students left the table to put on their aprons and get to work!

The first lesson for Tuesday was Tortellini, the classic Bolognese pasta that is often found in Brodo (broth), and is also wonderful with classic Bolognese meat sauce.

Sandra explained that Tortellini are very festive, and how family members, friends, even neighbors would get together and gossip while they made tortellini (why kids were frequently not allowed to help!) Growing up in an Italian-American family with many great cooks, I often enjoyed helping out in the kitchen, and never could understand why occasionally I was told to stay out of the kitchen! Guess there was some juicy gossip!

Sandra shared that in America, tortellini are more often filled with cheese, because the majority of Italian immigrants who came to the U.S. were from Southern Italy, in which cheese was used more frequently in stuffed pasta, as opposed to Bologna, in north-central Italy, an area which prides itself on hearty meat dishes, and elaborate meat-based sauces and fillings for pasta. The most famous Tortellini and standard bearer in Italian culture is the Bolognese variety with a meat-based filling, often prosciutto, mortadella, veal, nutmeg, parmesan, etc. Tortellini in Bologna is a celebratory food, and a lot of flavor and effort goes into making these little gems, as well as quality ingredients, but the end result is incomparable!
