Vitello Dolce Vita- a signature recipe at Tampa’s renowned Donatello for over 30 years!
This is an absolutely delicious dish, and pairs well with jumbo asparagus, and a glass of red wine, such as Belcolle Dolcetto d’Alba from Italy (shown below). Purchase top quality milk-fed veal scaloppine or cutlets, (you may also substitute chicken breasts or thighs for the veal if you prefer) and in minutes you can prepare a delicious meal and dine at home like you are in a four-star restaurant!
Serves two
Ingredients:
12 ounces veal scaloppini (2 6-ounce cutlets or several smaller veal medallions)
all-purpose flour to coat veal
2 tablespoons olive oil
1 tablespoon chopped shallots
2 ounces julienned prosciutto cotto (Italian cooked prosciutto, or a good quality cooked ham of your choice)
2 ounces julienned Portobello mushrooms
4 fresh sage leaves
2 ounces white wine
1 teaspoon black truffle shaving
¾ cup brown veal stock
1 ounce chilled butter

Oysters “Fiorentina” in the style of Florence, baked with a little spinach, béchamel, and sprinkle of freshly-grated Parmesan, great to share as an appetizer for a group.
Donatello’s signature pasta dish, “Tagliatelle alla Kathy” features exquisitely fresh and light house-made spinach pasta tossed in a light, velvety tomato sauce with sautéed ham and mushrooms, topped with freshly grated Parmesan. It is worth traveling to Tampa to try this, and if you are trying to watch your diet, try a half portion or get one for the table, take a twirl (or two), and pass it along! It is one of the best pasta dishes anywhere.

Italian-American Summer Green Bean and Potato Salad for July 4th
(Serves 12-20 as an appetizer or for a pot luck)
This great and light salad should be kept at room temperature if serving within two hours of preparing, otherwise refrigerate and remove for 30 minutes prior to serving.
Ingredients:
1- 26 ounce bag French green beans, blanch and drain, run cold water over set aside and toss with 1/3 of the dressing
10 pounds redskin potatoes, peel, dice and boil until al dente (roughly 10 minutes) set aside and toss with 1/3 of the dressing
1/2 red onion chopped (can opt to put on side)
2 cups grape tomatoes or cherry tomatoes (cut into quarters)
8 large eggs, hard boil (about 10 minutes), cool and slice into quarters
1/2 cup capers in brine (drain)
Assemble ingredients in a large bowl, top with remaining dressing
Dressing:
1 cup extra virgin olive oil
1 cup red wine vinegar
6 tablespoons Dijon mustard (Grey Poupon)
Juice of 1 lemon
1 shallot minced
Sea salt and pepper to taste
1/2 cup Italian parsley, chopped leaves
Combine ingredients and emulsify in a blender
Other options include adding olives (I like Kalamata, pits removed for convenience) and crumbled Feta for a Greek touch. Adding diced shrimp is a nice choice as well as adding some pasta and grated or shaved Parmesan cheese for a true crowd-pleaser!

Jack Dusty Restaurant Signature Cornmeal Blini’s with local Mote Marine Caviar and Lemon Crème Fraiche
Ingredients for Blinis:
1/2 cup cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1 tsp kosher salt
2 tbsp local wild flower honey
1 large free-range egg, beaten
1/2 cup + 2 tbsp organic milk
1 tbsp whole melted butter
Directions:
Combine cornmeal, flour, baking powder, and salt.
Mix egg, milk, and honey then stir into dry ingredients.
Slowly add whole butter
Cook in non-stick pan
Ingredients for lemon crème fraiche:
1 cup crème fraiche
Zest of 1 lemon
Caviar of your choice but we use Mote Marine Sturgeon Caviar (1/4 ounce per blini)
