Trevini’s Minestra alla Pugliese
(Apulian Vegetable Soup)
* ½ pound cannellini beans
* ½ cup olive oil
* 2 slices pancetta (cut julienne)
* 1 medium onion, diced
* 3 garlic cloves, sliced
* 2 large potatoes, peeled and diced
* ½ pound mushrooms, sliced
* 1 escarole, washed, dried and cut in two inch pieces
* 2 large tomatoes, diced
* ½ gallon water
* Salt and pepper
* 2 cups croutons
* Olive oil
Soak the beans overnight or for at least 12 hours. Place olive oil in a large soup pot over medium heat. Sauté pancetta, onion and garlic until golden brown. Add potatoes and stir into mixture. Drain the beans and add them to the pot. Stir and add the rest of the vegetables. Cover with water and cook over medium heat until the beans are tender. Add salt and pepper to taste.
Serve with croutons and a drizzle of olive oil.
Makes 6 servings.

Memorial Day Healthy Entertaining: Jicama, Mango, Avocado Salad

This Memorial Day for your backyard BBQ, and all summer long, skip the potato salad and cole slaw, and try jicama instead. This root vegetable is very hydrating and has 1/3 the calories and double the fiber of potatoes, and this salad contains no fattening mayonnaise that is often found in potato salad and cole slaw, and is often the culprit for spoiling and making diners ill. Also, avocado helps lower your blood pressure, cabbage is good for your liver (offsets celebrating with cocktails) and red pepper helps boost your system with antioxidants, and revs your metabolism!

Salad Ingredients:

1 cup of organic corn (optional–can use canned, fresh, or frozen and thawed)

1 cup canned black beans or chickpeas, rinsed (optional)

1 jicama root, peeled and julienned

1 head of purple cabbage, sliced

½ each red, orange, and yellow bell peppers, diced

1 avocado, chopped

1 ripe mango, chopped

1/2 cup crumbled Feta cheese (optional)

2 tablespoons cilantro, chopped as a garnish

Dressing:

½ cup fresh lime juice

½ cup extra virgin olive oil

2 cloves garlic

2 teaspoons sea salt

2 teaspoons chili powder or red chili flakes

2 teaspoons cumin powder

Combine dressing ingredients and emulsify in a blender. Mix together with the salad ingredients. Garnish with chopped cilantro.

Note: this is an excellent salad to plate and serve with grilled meat of seafood. Examples include: Seared Ahi Tuna (either a Tuna Steak per person, or slice the tuna and arrange on each plate), Grilled or Cedar Plank Salmon, Beef (grill and arrange slices over the salad- like a steak salad), or Chicken (same thing). Doesn’t this sound amazing?!

Ossobuco and Saffron Risotto Milanese from Golden Palate® Bice in Palm Beach, FL

We got to enjoy “mini” versions of this at the Antinori Wine Dinner last night!

Ossobuco alla Milanese Recipe Courtesy of Bice
Serves 4
Time: 3 hours

 

Ossobuco Ingredients:
2-3 tablespoons vegetable oil
4 veal ossobuco shanks, about 16 ounces each
1 cup flour
3 tablespoons olive oil
2 cloves of garlic, minced
1 lb onions, diced
1/2 lb carrots, diced
1/2 lb celery, diced
salt and pepper to taste
3 bay leaves
4 ounces dried porcini mushrooms, soaked in hot water for 20 minutes and chopped
8-ounce can whole tomatoes
1 cup white wine
1/2 quart chicken broth
1 quart beef or veal demi-glace

Risotto Ingredients:
2 tablespoons olive oil
1 shallot, minced
8 ounces dried risotto
1/2 cup white wine
salt and pepper to taste
1 teaspoon saffron, finely chopped
1 quart chicken or vegetable broth
2 ounces unsalted butter
4 ounces Parmesan cheese
1/2 cup extra virgin olive oil

Garnish Ingredients:
1 tablespoon orange rind
1/2 tablespoon lemon rind
1 tablespoon parsley, finely chopped
1 tablespoon rosemary, finely chopped
1 garlic clove, minced

Note: Add a sprig of Rosemary to each shank as a decorative garnish when plating.

Combine all ingredients together and set aside until needed.

Preparation:
Preheat oven to 350 degrees.
Set a sauté pan over medium-high heat and add vegetable oil. Season the veal with salt and pepper and coat with flour on each side. Add the osso bucco to the pan and sear on all sides.
In another pan over medium-high heat, add olive oil. Add the garlic and sauté until golden brown. Add the onion and cook until the onion is translucent. Add the carrot and celery. Season with salt and pepper and add the bay leaves.
Set the veal on top of the vegetables. Add the chopped porcini mushrooms and squeeze the tomatoes into the pan to break them up. Add white wine, salt and pepper. Cook until the alcohol evaporates, then add the chicken broth and demi-glace. Bring to a boil, then cover with aluminum foil and cook in the oven for 2 hours.
Half an hour before the osso bucco is done, start making the risotto. Sauté minced shallot with 2 tablespoons of olive oil. Add the dried risotto to the pot and stir for 3 minutes or until the risotto soaks up the oil and starts to fry. Add a 1/2 cup of white wine, season with salt and pepper and continuously stir until the rice soaks up all of the liquid. Add saffron and enough chicken broth to cover the rice in the pot. Keep stirring and adding liquid little by little until the risotto is cooked, about 25 minutes. You can also use a saffron broth in place of some of the chicken stock by soaking saffron threads in warm water.
Once the risotto is cooked, remove it from the heat and add butter, cheese and olive oil. Fold the ingredients together until incorporated. Serve immediately with veal and top with garnish.

Recipe: Copycat Hillstone/Houston’s Seared Ahi Sashimi Salad with Avocado and Mango

This is one of my favorite salads of all time! After many visits to Houston’s/Hillstone restaurants and researching it online, and experimenting, I believe we are close! Fortunately, I live near a Houston’s, so I enjoy this salad regularly, but whether you live near a location or not, this is a great, light, healthy, delicious meal to make at home, and is perfect for entertaining this summer, as it is light, fresh, and simple!

Here’s what I did ahead of time: Make the cilantro-ginger vinaigrette by combining 1 packed cup cilantro leaves, 1 inch piece fresh peeled ginger, 1 tsp sesame oil, 1/2 cup olive oil, 1 tbsp rice vinegar (mirin), 3 tbsp fresh lime juice, 1/2 tbsp lime zest, 2 tsp agave, 1 tsp salt and 1/2 tsp freshly ground black pepper in a blender and blend until smooth (1). I then sliced up two mangoes, one avocado, two tomatoes and set them aside in a container in the fridge. I washed two heads of baby frisee and one head of red leaf lettuce then patter them dry and put them in the fridge too. Shave 1 tbsp worth of ginger to be served on the side and now you have everything prepped.

When you’re ready to eat, start by searing off the tuna. I got one 8 ounce ahi tuna steak and cut it into 3 one inch strips and seasoned all four sides with salt and fresh ground pepper (2). Heat up 2-3 tbsp olive oil in a sauté pan over medium high heat and then put the tuna in the pan (3). The idea here is to just give a quick sear to all four sides while leaving the inside raw so you have to move pretty quickly. Once all four sides are seared, transfer to a plate (4) and then cut into slices. Toss the mixed greens with some of the vinaigrette (5) then add some to each plate. Top the salad with the tomato, avocado and mango slices and then put the tuna and the shaved ginger to the plate (6).

Copycat Hillstone/Houston’s Sashimi Tuna Salad

Serves two

For the vinaigrette:

1 packed cup cilantro leaves

1 inch piece peeled fresh ginger

1 tsp sesame oil

1/4 cup olive oil

1 tbsp rice wine vinegar

3 tbsp fresh squeezed lime juice

1/2 tbsp lime zest

2 tsp agave nectar

1 tsp salt

1 tsp soy sauce (low sodium, or omit the salt)

1/2 tsp fresh ground black pepper

 

For the Salad:

two heads baby frisee lettuce

one head red leaf lettuce

two tomatoes, cut into wedges

one avocado, sliced

two mangoes, sliced

1/4 red onion, diced

1 tsp sesame seeds to garnish (optional)

 

For the Tuna:

8 ounce ahi tuna, cut into 1 inch strips

salt and fresh ground black pepper

2 tbsp olive oil

Pour on plate sauce and arrange sliced tuna over:

4 tbsp soy sauce (low sodium preferred)

1 tbsp fresh grated ginger

1 tbsp fresh cilantro, finely chopped

 

Pickled ginger on the side (as served with sushi)

 

Make the cilantro-ginger vinaigrette by combing all ingredients in a blender and blending until smooth.

 

Dressing to add on top of the salad:

1/2 cup fat free or low fat mayonnaise

1/4 cup yellow mustard

2 tablespoons honey

1 tablespoon rice wine vinegar

1 tablespoon finely chopped chives

(mix or blend these together, spoon over the top of the salad when assembled at the table for some added zing!)

Toss the lettuce with some of the vinaigrette and put on a plate then top with the tomato, avocado and mango.

Heat up the olive oil over medium high heat and season all four sides of the strips of tuna with salt and pepper. Quickly sear all sides of the tuna making sure the inside remains rare-raw, transfer to a plate and cut into slices. Plate with the salads, pour the soy-ginger sauce on the front of the plate, arrange the tuna slices on top of the sauce, add the pickled ginger on the side, serve with the honey-mustard dressing to top the salad. I love this with additional mango and avocado slices on the side!

Fred Bollaci Attends “Two Islands” Wine Dinner at Golden Palate® Marcello’s La Sirena in West Palm Beach, Florida Featuring Wines from the Islands of Salina and Sardinia and Fabulous Food by Chef/Owner Marcello Fiorentino!

On Tuesday May 24th, 2016, Fred Bollaci, international healthy-gourmet lifestyle expert and sommelier enjoyed attending this fabulous wine dinner at Marcello’s La Sirena, celebrating 30 years as one of the top Italian restaurants and wine programs in the State of Florida! Diners were treated to a selection of wines from the islands of Salina (part of the Aeolian Island-Isole Eolie chain off the northeast coast of Sicily, whose neighbors include Lipari, Vulcano, and Stromboli), and from the island of Sardinia, paired with the exceptional cuisine of Chef/Owner Marcello Fiorentino.

The Hauner family, originally from Austria moved to Salina where they had a family and got into winemaking. Their wines capture the essence of the salty Mediterranean and rich minerality of the soil on this tiny volcanic island, basking in the Sicilian sun and kissed by the mild sea breezes. The whites paired nicely with Marcello’s fantastic, fresh seafood salad- Insalata di Mare with arugula, light and lemony!

 

In homage to Sardinia- Sardegna, we enjoyed freshly made Gnochetti with a Lamb and Vegetable Ragu, reminiscent of Ossobuco!

The Sardinian wines were represented by Renato Spanu, winemaker. The Vermentino was excellent! Vermentino is the #1 most popular white wine in Italy, and in fact, Sardinia is the only DOCG zone for Vermentino in all of Italy! The other 4 of the top 5 most popular varietals in Italy are red wines. The Vermentino was perfect with the Swordfish over lemony risotto. Then we moved on to reds, one from Salina, and one from Jankara to pair with a roasted pork, and concluded with fresh Florida watermelon- anguria, something Italians and Americans both love, a perfectly refreshing, healthy way to end a great dinner!

All the wines featured are reasonably priced- between the $20-$30 mark retail, which make them approachable for everyday drinking. Be sure to get on La Sirena’s mailing list to stay informed about future wine dinners– you won’t want to miss out! The evening was very well done, both informative, and enjoyable with great food and wine. There is a reason Marcello’s has remained one of the foremost Italian restaurants in all of Florida for 30 years, and has been honored with the Wine Spectator Grand Award, one of only several restaurants in the entire state!
