Some great recipes from our Charter Member, Chef Amy Chamberlain, celebrating 20 years as chef/owner of The Perfect Wife Restaurant & Tavern in Manchester, VT, just in time for summer! We have her amazing Sesame Crusted Salmon, soup, salad, and more!

 

Sesame Crusted Salmon with Killer Oriental sauce and crispy rice sticks

Serves 4

4- 7 oz. pcs. Of salmon filet

½ c. sesame seeds

Olive oil, salt and pepper

 

Rub salmon filets with olive oil, salt and pepper and sprinkle liberally with sesame seeds.

 

1 zucchini, sliced on bias

1 yellow squash, sliced on bias

1 red bell pepper, julienne

1 carrot, sliced thinly on bias

½ head of nappa cabbage, chiffonade

Toss all of these vegetables together.

 

Killer Oriental Sauce

 

1 T. fresh minced ginger

1 T. ch. Fresh garlic

1/3 c. sesame oil

½ c. rice vinegar

¼ c. olive oil

1/3 c. water

½ t. crushed red pepper

1/3 c. pineapple juice

3/4 c. sweet soy

3 T. soy sauce

 

Mix well together. This will settle so mix well before each use.

Nori Rolls of Crab, Tuna and Avocado

 

4 nori sheets

1 c. sticky rice, cooked and cooled

3 scallions, julienne

1 avocado, sliced thinly

1 small red bell pepper, julienne

4 oz. very fresh red yellowfin tuna

4 oz. fresh Maine crab meat

Wasabi, soy sauce, and pickled ginger

 

Lay one nori sheet shiny side down. Spread ¼ c. rice evenly onto bottom 2/3s of nori sheet. Spread a tiny bit of wasabi across the bottom of the rice. Lay across the bottom a little of each: scallions, avocado, red pepper, tuna, and crab. Roll tightly and secure with a little water. Set aside and repeat three times. Slice the rolls into about 10 pieces each. Serve them with soy sauce, wasabi, and pickled ginger.

 

 

Mushroom Tom Yum Soup with Galangal and Coconut

 

6 c. chicken stock

1 t. salt

2 stems lemon grass

4 kaffir lime leaves

4 slices galangal

2-3 fresh chilies

1 T. chopped garlic

8 oz. fresh mushrooms, sliced

1 c. coconut milk

1-2 T. fish sauce

3 T. lime juice

Garnish: 1 fresh red chili, sliced, 2 T. ch. Cilantro, and 4 scallions, chopped

 

Bring First seven ingredients to a boil and simmer, covered, for 20 minutes. Add mushrooms and simmer 5 minutes more. Stir in coconut milk. Add fish sauce and limejuice to taste. Serve sprinkled with garnish.

 

Thai Beef Salad

 

8 oz. piece of beef tenderloin or top sirloin

2 T. ch. Cilantro

The leaves of one head of butter lettuce, washed

A few thin slices of red onion

1 cucumber, thinly sliced

 

Dressing and dipping sauce

1 T. chopped garlic

1 T. red chili flake

1 T. sugar

Juice of 1 lime

2 T. fish sauce

1 T. fresh mint

1 T. fresh cilantro

1 c. water

 

Mix together and shake well.

 

Rub beef with cilantro. Sear beef rare on all sides. Chill, even freeze a little for easy slicing. Arrange a few leaves of butter lettuce on a plate. Place three thin slices of beef on each plate. Toss red onions and cucumber with dressing. Place on top of beef. Put remaining dressing in ramekins for dipping if desired.

 

Wild Farm Organics’ Fresh Tomato Salad

All shapes, colors, and sizes of tomatoes

Very good olive oil

Kosher salt

Fresh ground black pepper

Fresh basil

 

Slice tomatoes evenly, leaving smaller tomatoes halved or whole. Arrange on a white platter. Slip whole basil leaves between tomato slices. Sprinkle with kosher salt and olive oil. This can also be individually plated.

 

 

Three Pepper Purees for NY Strip Steak

 

One large red bell pepper

One large yellow bell pepper

2-3 Anaheim peppers

¾ cup chicken stock

¾ c. butter

¾ c. cream

Seasoning

Roast one red bell pepper, one yellow bell pepper and 2-3 Anaheim peppers by rubbing them with olive oil and salt and putting them in a hot oven (425 or so) until they collapse. Remove them from the oven and place in a bowl and cover tightly (immediately) with plastic wrap.

 

Peel and seed the peppers when cool, keeping the colors separate from each other. Starting with the yellow pepper…

 

Put the pepper in the blender with ¼ cup chicken stock and 1 t. lime juice. Puree till very smooth. Place puree in a small saucepan and reduce a little bit. Add ¼ c. cream and reduce again. Whisk in ½ stick (1/4 c.) of unsalted butter. Season to taste with salt and pepper. You may create a Mexican flavor by adding cumin and chili powder if you’d like.

 

Repeat with other two colors of peppers. Pool them on a plate side by side and lay grilled steak over them.

 

 

Romaine Lettuce with Black Olive and Orange Vinaigrette

 

2 navel oranges, supremed

1/2 red onion, sliced thinly

12 – 15 kalamata olives, pitted and cut into slivers

¼ c. extra virgin olive oil

1 T. sherry vinegar

a pinch of ground cumin

2 heads of romaine hearts, cut into 1 inch pieces

 

Supreme the oranges over a mixing bowl. Add the orange sections and all other ingredients but the lettuce to the bowl. Toss with the lettuce and a little salt and fresh ground black pepper and serve. Serves 4.

 

Juice of 1 lime

2 T. fish sauce

1 T. fresh mint

1 T. fresh cilantro

1 c. water

 

Mix together and shake well.

Recipe For A Light & Healthy Memorial Day: Grilled Local “Fresh Catch” with Ripe Mango and Grilled Zucchini by Chef Angelo Romano of Golden Palate® Paradiso Ristorante in Lake Worth, FL

Our first two summer ingredients are zucchini and Florida’s local treasure, mango. Paired with a fresh catch these ingredients and flavors are the foundation for creating a perfect summer dish.

To prepare the zucchini:

Ensure that the grill is hot
Slice the zucchini, then place it on the grill
Seasoning is not necessary prior to cooking; we want to allow the natural flavors to develop while grilling before we season.
To season the zucchini:

We recommend none other than Chef Angelo’s Amalfi Coast traditional seasoning recipe.

Sprinkle with salt and pepper
Drizzle with extra virgin olive oil and red wine vinegar
Add a touch of fresh mint
To prepare the mango:

Dice the fresh mango
Lightly sauté with red onions and red wine vinegar to create chutney
To prepare the fresh catch:

We are using a locally-caught Florida snapper filet for this recipe.

Ensure that the grill is hot
Place the filet on the grill and cook until your desired temperature
To season the fresh catch:

Drizzle with extra virgin olive oil
Top with garlic and parsley, or your preferred fresh herb choice
Drizzle with a squeeze of fresh lemon juice

Fred’s Notes: The key is to talk to your fishmonger wherever you are, and get the freshest fish possible. This can also accompany grilled chicken, veal, or pork chops, making it a very versatile preparation that is fresh, light, and full of flavor. Grilling is great in warmer weather when people want to be outdoors and not heat up the house! Although in Florida it is warm most of the year (and actually quite hot around Memorial Day typically), Memorial Day weekend in most of the country is the unofficial start to summer, which means backyard barbecues, sitting by the pool, and enjoying being outside! Bruschetta with Fresh Spring Onions and Truffle

This take on Bruschetta is perfect for your spring entertaining, particularly with the long Memorial Day holiday weekend coming up! Why not make it Italian-style!

Bruschetta con Purea di Cipolline Fresche e Tartufo (Bruschetta with Spring Onion and Truffle Puree)

Ingredients:

8 tablespoons extra virgin olive oil
8 spring onions (or leeks), white part only, rinsed and thinly sliced
Salt and pepper to taste
1 teaspoon truffle paste (purchase online or at gourmet markets)
4 big slices of bread, toasted on both sides

Directions:

Heat the oil in a heavy gauge braising pan and add the onions. Season with salt and pepper and cook over low heat for 5 minutes, stirring very frequently. Pour in 2 cups hot water and continue to cook until creamy and reduced, about 20 minutes. Stir in one teaspoon truffle paste and blend well. Toast the bread and spread with the mixture. Serve immediately.

After Burn: Vigorous Exercise Shown to Increase Metabolic Rate For 14 Hours!

Mid-way through my hour-long run this morning!

Good news fitness buffs! A recent study has shown that participants who cycled vigorously for 45 minutes burned 190 calories more during the 14 hour period following  workout than on the days they didn’t do that kind of exercise. This is something we have long suspected, and I have firsthand appreciation for. I could walk for 2 hours and cover the same distance as I would running in one hour, and burn almost as many calories. The difference between the walk and the run is the after burn. Whether you run outdoors or on the treadmill, ride a bike or take spinning classes, cardiovascular activity is an absolute must for those serious about getting in shape and staying there! Of course, you should consult your physician before beginning any exercise regimen to determine suitability and to detect any underlying health problems that might make your planned activity not advisable, but whatever your fitness level or ability, here is proof that working a little harder has significant extra benefits! The really nice thing is you burn the calories in a lot less time, and you keep burning for hours after, something that less intense activity does not do for us. So, if you are experiencing a bout of laziness this weekend, or don’t want to get out of bed, or lace up, or go work out, this may be the added incentive you are looking for! “One and done” is my new motto when it comes to my daily cardio–I do an hour, and find that running at 6 mph is the most beneficial cardio for keeping trim and feeling good overall. I sometimes mix it up with some biking and swimming, and on some days a brisk walk, but the benefits of running can’t be denied.

Recipe: Chilled Tomato Soup with Avocado Coulis from Golden Palate Partner® Bleu Provence in Naples!

This is perfect for summer entertaining!

Chilled tomato soup with avocado coulis

INGREDIENTS:

Soup

2 pounds of plum tomatoes

1 red pepper, cut into cubes

1 red onion, peeled and cut into cubes

5 cloves of garlic, peeled and thinly sliced

1 sprig fresh thyme

1 sprig fresh rosemary

1 sprig fresh basil

1 teaspoon sugar

1 cup olive oil

salt and pepper to taste

Coulis

1 avocado, peeled and pitted

juice from one lemon

salt and pepper to taste

2 tablespoons water

PREPARATION

Soup

Preheat oven to 350 degrees.

Wash tomatoes and cut into pieces (leave the skin on). Place tomatoes, peppers, onions, three cloves of sliced garlic and basil on a tray ? cover in sugar and salt and pepper. Spread thyme and rosemary on top and pour on the olive oil.

Cover with aluminum foil and place in oven for two hours.

Take out and cool down. Put in the refrigerator overnight.

Place vegetables in a mixer until a thick liquid. Strain through a chinois. Add salt and pepper to taste if needed.

Coulis

Place avocado, lemon juice, salt, pepper and water in blender until thick.

Place a little coulis in a martini glass, fill glass with tomato soup and garnish with more coulis. Serve cold. Serves 4
