My Recipe: Sausage, Peppers, and Onions: An Easy Weeknight Meal, and Great Potluck Dish!

Prep time: 10 minutes Cook time: 40 minutes Yield: Serves 4
I like to use different colored bell peppers, which make for a more colorful presentation. I also like a a combination of sweet and hot sausages, but if you want a milder dish, use only the sweet sausages and reduce the amount of chili pepper flakes in the recipe. Another bit of advice: I like to buy my sausages from a good Italian market or butcher, the quality and flavor are better! (Likewise if you want it hotter, use hot sausages and/or increase the amount of chili pepper flakes.) You can also add some fresh chili peppers, habaneros, or Scotch bonnets, but do so sparingly because they will make it really hot really fast! Be sure to inquire of your guests whether they like the food spicy or not (you can always sauté some hot peppers separately, or add chili flakes at the table if you have some who like it hot, and some who don’t. Also, when working with hot peppers, do NOT touch your face or eyes!)

Ingredients:
4 Italian sausage links (sweet, hot, or a couple of each)
2 Tbsp olive oil
1 each: green, red, orange, and yellow bell peppers, sliced into 2 to 3 inch long strips
4 garlic cloves (I suggest leaving them whole or cutting each into several smaller pieces so they can be enjoyed (or removed) and not overpower the dish with garlic)
1 large sweet or yellow onion, sliced into 1/4-inch half-moon shaped slices
1 25 ounce can of San Marzano peeled tomatoes from Italy (crush by hand, remove the remaining part where the stem was attached, add the juices, rinse can out with a little water, which you may add if it appears to be getting too thick after simmering)
1 cup fresh basil leaves, fresh Italian parsley (to garnish)
1/2 cup red wine and 1/2 cup white wine (you may use 1 cup of either, or to give this dish a Sicilian kick, try using Marsala for this step)
pinch red pepper flakes (optional)
Salt and pepper to taste

 

Note: this can be served with pasta (3-4 ounces per person, cooked al dente, and combined when pasta is done, on fresh Italian bread, over polenta, or just as it is! It makes an easy, excellent, inexpensive Italian-American dish for a summertime pot luck! You can easily serve more people by simply increasing the number of sausages, the amount of peppers can remain the same for at least 8-10 sausages before adding more. Either serve the sausage links whole or you may cut them up and combine with the peppers, which is the easiest way for serving at a potluck or as one of many dishes.

Directions:
1 Brown the sausages: Heat the olive oil over medium heat in a large pan that has a lid. When the oil is hot, add the sausages and brown them slowly. If they sizzle and crackle too much, turn the heat down. You don’t want them to burn, you want them golden brown.
Cook for several minutes, turning them occasionally so they brown on all sides. When the sausages are browned, remove from the pan and set aside.
2 Sauté the onions and garlic: Increase the heat to medium-high and add the onions and garlic. Add a little salt to help the onions sweat. Toss so they get coated with the oil in the pan and sear them, stirring every so often. You want them to sweat and get a sear, not burnt. Next, add the peppers, and some additional salt to help them sweat. Stir and continue to cook until they are soft and you get a little blackening.

3 Deglaze pan with wine: Add the red and white wine if you are using, and scrape the bottom of the pan with a wooden spoon to release all the browned sausage bits. Let the wine cook down by half.

4 Add tomatoes, basil, chili flakes, additional salt and pepper to taste, and the already cooked sausages, and simmer and stir well to combine. Reduce to low heat and let simmer. Cover and simmer until the peppers are soft the sausages are cooked through, about 20-25 minutes.

If you are serving with pasta, bring a large pot of water to a boil, generously salt, cook the pasta al dente, reserve a cup of pasta water, combine the pasta with either the entire mix of sliced up sausages and peppers, or if you prefer, remove the sausages and some of the peppers and onions and place in a bowl, and combine the pasta with some of the peppers and onions and bring back to the stove, toss over medium heat, add in a few splashes of pasta water to help amalgamate the ingredients, take off the heat, add a drizzle of good extra-virgin olive oil for flavor, freshly grated Pecorino Romano, and a bit of chopped Italian parsley to garnish, plate and serve immediately. Ricotta cheese is also nice with this dish, especially if you are using hot sausage, and hot peppers, the cool, creamy cheese is a great complement.

Pan-Seared Rouget (Red Mullet) with Cauliflower Purée and Kalamata Olives by Golden Palate® Chef Jose Martinez (Maison Blanche, Longboat Key, Sarasota, Florida)

Pan-Seared Rouget with Cauliflower Purée and Kalamata Olives

Serves 4

2 ounces Kalamata olives

extra virgin olive oil

6 ounces cauliflower

½ tablespoon minced preserved lemon

1 ounce hazelnut oil

6 tablespoons extra virgin olive oil

8 whole rouget (red mullet), fileted

1 ounce hazelnuts, toasted and crushed

Place olives in a blender. With the motor running, slowly add 1-2 tablespoons olive oil until the olives form a rough purée. Remove and set aside.

Boil or steam the cauliflower until soft, then purée along with the hazelnut oil and preserved lemon in a food processor until smooth.

Add enough olive oil to a skillet to coat the bottom and heat. Sear the rouget for 1 minute (or to preferred doneness).

While the fish are searing, place some of the cauliflower purée on each of 4 plates as a bed for the fish, and transfer the filets onto the purée as soon as they are done. Drizzle the kalamata sauce over the fish and purée, and garnish the crushed hazelnuts. Serve.

Giulio Cesare, the Italian name of emperor “Julius Caesar” has been regarded as one of Long Island’s top authentic Italian ristoranti since opening in 1973, and has been named a Fred Bollaci Enterprises Golden Palate Partner® featuring hands-on dedicated staff and excellent cuisine that has remained consistent for 4 decades. The restaurant actually is named as a combination of the two owners, Giulio Cesare is named for its two owners, Giulio Donatich and Cesare Dundara. Mr. Donatich is the chef and Mr. Dundara the Maitre d’, and both are seen in the dining room mingling with guests, many of whom have been steadfast regulars from the early days.

The restaurant serves dinner and caters to a well-heeled clientele who appreciates the Old World charm and hospitality. Frequent guests include business people, families celebrating special occasions, and the occasional celebrity. Growing up on Long Island, I was a regular with my family–in this case it is nice to see that some things haven’t changed. Diners can expect attentive, professional service, authentic cuisine cooked to order, and a number of specials, as well as a full cocktail menu and approachable wine list in an atmosphere that is a throwback to the old days of Italian dining on Long Island.

On a recent visit, we enjoyed a beautiful Caprese Salad with excellent, ripe beefsteak tomatoes and the addition of perfectly poached, chilled jumbo asparagus to start, followed by Penne Giulio, which is served tossed in tomato sauce with ricotta, a side of excellent, moist, flavorful veal meatballs (served with a tomato-mushroom sauce), and fresh Snapper Livornese (the fish was exceptionally fresh, moist, and delicious)–this is as fresh as it gets! For dolci, don’t miss the Zabaglione made to order, or the house-made ricotta cheesecake served with fresh fruit.

The seafood salad at Donatello takes me straight to the Italian coast, whether the Mediterranean or Adriatic. Italians have a love affair with food, wine, and the art of living, and are fanatics about the freshness of their raw ingredients, be it the shrimp, calamari, or fresh, flavorful produce. Add in some quality extra virgin, and a squeeze of lemon, there you have it, simplicity and excellence of the Italian kitchen at its best!

No visit to Donatello would be complete without sampling their freshly made pasta. I liken the ethereal strands of Spinach Tagliatelle to poetry. Order the Tagliatelle alla Kathy for something truly outstanding and memorable–Spinach Pasta with tomato, mushrooms, and just a touch of cream simmered over a flame, tossed, and plated in the dining room so diners can enjoy the show and the aroma, you can’t get it better anywhere else!

Donatello excels at everything food, from the simple grilled Rack of Lamb with garlic and rosemary, to the more decadent Filetto “Gioacchino Rossini,” with paté and Madeira sauce, and the best Caesar Salad anywhere, with freshly grated Reggiano-Parmigiano.

Dining Room

The elegant, romantic dining room is aglow in hues of salmon. Add in the roses, gold-leaf ceiling, and Venetian artwork, tuxedoed waiters with Italian accents, and luscious cuisine being prepared before your eyes, you’ll see why this is an extraordinary restaurant.

Although I don’t really have a sweet tooth, when it comes to Donatello, whose desserts are made fresh in-house daily, I often save a little room! The Napoleon Cake made with wafers of puff pastry and cream is amazing, but so is everything else! I highly recommend coming for a birthday celebration, the staff at Donatello sings the best rendition of “Happy Birthday,” or if you prefer “Tanti Auguri” around! Also, be sure to subscribe to their e-newsletter for reminders of special events, including their monthly Opera Night with amazing performers from Opera Tampa, as well as the much-anticipated annual Carnevale celebration where everyone dresses up to celebrate Mardi Gras (Martedi Grasso), Venetian-style!

Wines

The extensive, award-winning wine list at Donatello has one of the best selections of Italian wines from every region, and at every price point, as well as selections from the US, and around the world! Of course, there are the big names like Gaja, Tignanello, and Sassicaia, and an extensive list of Barolo, Brunello, Super Tuscan, and more, some familiar, some from boutique producers the owner knows from years of experience, and there are also some good values. Donatello is a great place to explore Italian wines, and perhaps try something like a Dolcetto or Barbera, as they have a great selection. The knowledgeable staff is pleased to guide you through the list and assist in helping you select the perfect bottle or bottles to complement your meal. There is also a respectable selection of wines by the glass.

Lounge

With beautiful furnishings, rich mahogany, luxurious table linens, roses, and Venetian masks adorning the walls, reflecting the owners’ heritage, the comfortable, beautiful, luxurious, Old World-style lounge and piano bar at Donatello, is a favorite among locals and visitors to the Tampa area for their live music and excellent cocktails! I’ve enjoyed many aperitivi and night caps here with family and friends over the years, and have even stopped in for a coffee and dessert and to listen to the music after attending a performance or sporting event in town.

Any visit to Tampa must include an evening at Donatello, in fact any food and lifestyle connoisseur who wants to experience the best of Italian cuisine and hospitality should experience this! Anytime I am in Florida and am “homesick” for Italy, I head to Donatello!

Mackinac Island, accessible only by boat from Mackinaw City or St. Ignace is straight out of a fairy tale. There are no motorized vehicles. People get around by foot, bike, or horse and carriage. The quintessential Mackinac experience is at The Grand Hotel, which has welcomed visitors since 1887. Perched on a hill overlooking Lake Huron and the Straits of Mackinac, the Grand is home to the “longest porch in the world” with breathtaking vistas of Lake Huron. The hotel features excellent cuisine paired with wines curated by Master Sommelier, and Michigan wine enthusiast, Elizabeth Schweitzer. There are only several hundred Master Sommeliers in the world! I enjoyed the Old World service, and an array of activities during my stay, including golf, hiking, swimming, and kayaking.

Downtown Mackinac Island is home to fudge shops, restaurants, pubs, t-shirt shops, and many places to stay. Notice: no cars! It’s bicycle, horse and carriage, or your own two feet!

The Grand Hotel, and Mackinac Island itself are perfect for families! During the day, rent a bike and explore the island. Visit the town (quaint shops, fun bistros, and famous fudge shops). You may also want to ride the 8-mile perimeter road along the lakeshore, and have a picnic on the peaceful shoreline, visit the historic fort, or hike the scenic trails. In the evenings, everyone dresses for dinner at The Grand

(jacket and tie required for gents), an ode to a bygone age of elegance. Experiencing this magical place, I understand what they mean by “Pure Michigan.”

The town is filled with fun shops and restaurants. Since no cars are permitted on the island, locals and visitors utilize bicycles, horses, or their own two feet!

We then headed to Detroit before flying home for a pit stop at the legendary Andiamo (Joe Vicari—now a mini chain with 9 locations) featuring the excellent Italian-American cuisine inspired by Vicari and late Chef Aldo Ottaviani (their rice balls are a must try). Also visit: Joe Muer, featuring excellent seafood overlooking the Detroit River and across to Windsor, Ontario. If you have a couple days, other Detroit-area attractions include: The MGM Casino and Greektown.
