Recipe: Beach Bistro’s Butter Poached Lobster Recipe, Anna Maria Island, Florida

Butter Poached Lobster

1¼-pound lobster poached in butter with a hint of orange and star anise.

Ingredient:

1¼-pound lobster

Method:

Place the lobster in a large pot of boiling water, just long enough to kill it. Then, immediately pull it out and dunk it in an ice water bath (this pulls the meat away from the shell and prevents the meat from shrinking). Remove the tail and claws from the body, but keep the body for presentation. With shears or a chef’s knife, carefully remove the shell from the tail meat, leaving the actual tail. Crack the claws and carefully remove the meat in one piece. You can remove the knuckle meat, too, if desired.

For poaching broth:

Method:

2 pounds butter

¼ cup orange juice

4 pieces star anise

In a medium saucepan, bring orange juice and star anise to a boil. Lower heat to a simmer and slowly incorporate the butter until it is a creamy, smooth texture. Be careful not to break the butter. Add the lobster, poaching it slowly on low heat. Poach until the lobster is cooked through and no longer opaque (about seven to 10 minutes).

Note: it may sound like a lot of butter–it is, but fortunately you don’t end up eating very much of it.

Recipe: Linguine alle Vongole (with Clams and Grape Tomatoes) by Caffe’ Luna Rosa in Delray Beach, FL

Linguine alle Vongole (with Clams and Grape Tomatoes)

Serves 2

Ingredients:
10 ounces linguine, dry
40 ounces water, salted to taste
4 tablespoons extra virgin olive oil
3 garlic cloves, fresh, sliced thin
16 littleneck clams (whole)
8 ounces clams, fresh (chopped)
6 ounces grape tomatoes (fresh)
3 ounces dry white wine
6 ounces clam broth
1⁄4 pinch red pepper, crushed
1 pinch parsley, fresh, chopped
1⁄2 pinch oregano, fresh, chopped
1 pinch basil, fresh, chopped

 

Directions:

In a medium pot, bring salted water to a boil and cook pasta to al dente, stirring occasionally. When finished, cool slightly under tap water and set aside. (Oil pasta if cooking far in advance).
In large skillet, brown garlic in 2 oz. olive oil, until tan. Immediately add whole clams and grape tomatoes, followed by remaining ingredients. Cover and simmer until whole clams open. Toss al dente pasta in sauce and simmer for 2 to 3 minutes. Serve in two large bowls and finish with a drizzle of remaining olive oil. Garnish with parsley or basil leaves.

Recipe: Caffe’ Luna Rosa in Delray Beach, FL’s Famous Crabcakes

 

Caffe’ Luna Rosa’s Famous Lump Crab Cakes

Servings: Makes 6 crab cakes, enough to serve 3 adults as a main course
Ingredients:
For the Crab Cakes:
• 2 large eggs
• 2-1/2 tablespoons mayonnaise (may substitute with low fat mayo for dietary purposes)
• 1-1/2 teaspoons Dijon mustard
• 1 teaspoon Worcestershire sauce
• 1 teaspoon Old Bay seasoning
• 1/4 teaspoon salt
• 1/4 cup finely diced celery, from one stalk
• 2 tablespoons finely chopped fresh parsley
• 1 pound lump crab meat (see note below)
• 1/2 cup bread crumbs
• 2 oz extra virgin olive oil (for cooking)

1. Combine the eggs, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the crab meat and bread crumbs. Fold mixture together until just combined, being careful not to shred the crab meat. Shape into 6 crab cakes (about ½ cup each) and place on prepared baking sheet. Cover and refrigerate for at least 1 hour.

2. Preheat a large nonstick pan to medium heat and coat with olive oil. When oil is hot, place crab cakes in pan and cook until golden brown, about 3-5 minutes per side.
Serve with your favorite sauce or salad
